Strawberries have a shallow, fibrous root system with most of its mass in the top 6–12 inches of soil, a crown that rots if it stays wet, and fruit that sits at or just above the ground where any splashed water and soil lands directly on it[1][2]. Why strawberries suit olla irrigation
An olla is an unglazed clay vessel buried up to its neck and kept filled with water. The porous wall releases water only as fast as the surrounding soil pulls it, so dry soil draws water out and moist soil does not — delivery is regulated by soil moisture tension rather than by a timer, and because the outlet is underground there is essentially no evaporative loss[3][13].
Three features of strawberry biology make that an unusually good match.
Shallow roots with no drought reserve. Most strawberry root mass sits in the top 6–12 inches, and extension guidance is consistent that the crop needs frequent, even moisture rather than infrequent deep soaks[4]. That top layer is also the layer that dries fastest in sun and wind. A shallow-rooted perennial has nowhere to go when it dries out, so it registers stress within a day or two.
A crown that must stay dry. The strawberry crown is the compressed stem at soil level from which leaves, flowers, and roots emerge. Planted too deep or kept persistently wet, it rots — and crown rot generally kills the plant rather than merely damaging it. Overhead watering keeps the crown wet for hours at a time; an olla delivers below it and leaves the surface comparatively dry.
Fruit that sits on the ground. Botrytis grey mould is the dominant strawberry fruit disease, and free moisture on the fruit surface plus extended wetness periods are what allow it to establish. Standard management is explicit: avoid overhead irrigation where possible, water early in the day, mulch under the fruit, and keep the canopy open[5][6]. 02 · WATER NEEDS
Strawberry water needs and the critical stages
Strawberries want roughly 1 to 1.5 inches of water per week through the growing season, rising toward the top of that range or beyond during fruiting and in hot weather[7][4]. One inch over a square foot is about 0.62 gallons, so a 4-square-foot cluster of plants around one olla needs roughly 2.5–4 gallons a week in ordinary conditions. A 1-gallon vessel therefore wants refilling every two to four days in season — which is the practical reason to fit two ollas in a 4×4 bed rather than one.
Demand is far from uniform across the year:
- Establishment. Newly set bare-root or plug plants have almost no functioning root system. Water at the crown by hand for the first two to three weeks while roots grow out toward the olla’s wetting front.
- Flowering. Moderate demand but high sensitivity. Water stress at bloom reduces the number of flowers that set and lowers eventual berry count.
- Fruit sizing. The peak. A strawberry is roughly 90–92% water and sizes up by turgor-driven cell expansion over a short window[15]. This is where water supply translates most directly into yield: drought during sizing gives small, hard, seedy berries no amount of later watering can rescue.
- Runner production and late-summer bud initiation. Often neglected. For June-bearing varieties the flower buds for next year’s crop are initiated in late summer and autumn, so a plant that is allowed to bake in August pays for it the following June. Runners also need moisture at the point where daughter plants root down.
Everbearing and day-neutral varieties spread that demand across the whole season rather than concentrating it in a few weeks, which suits olla irrigation particularly well: the vessel supplies a steady trickle continuously rather than needing to be scaled up for a single peak.

03 · SIZE & PLACEMENT
Olla size, depth, and placement for strawberries
Size. A 1–2 gallon olla is right for strawberries. It holds enough buffer to carry a cluster of plants for several days without being so tall that most of its wall sits below the shallow root zone. Half-gallon vessels work in individual containers but need topping up daily in summer.
Depth. Bury the olla so its body occupies roughly the top 8–12 inches of soil, with the neck 1–2 inches above the surface. That is shallower than the 12–14 inches you would use for peppers or tomatoes, and it matters: put a tall vessel in deep and the majority of its porous surface releases water below where strawberry roots can use it.
Distance. Set plants 8–12 inches from the wall. Closer than about 6 inches and the crown sits in the wettest part of the profile, which invites crown and root rot; further than about 14 inches in a sandy mix and shallow roots may never reach the wetting front[14]. Set the crown correctly. This is the classic strawberry planting error and it interacts with irrigation. The crown must sit exactly at soil level — roots fully covered, crown fully exposed. Buried crowns rot; exposed roots dry out and die. Plant on a slight mound or in a raised bed if your ground is heavy, and never site an olla in a dip where water pools.
Install first, and mark it. Dig the olla in and fill it before planting, then set plants at the edge of the visible damp ring. Because strawberries are perennial and spread by runners, mark the neck with a stake — within two seasons a matted row will have grown over it completely.
Mulch under the fruit. Straw mulch is not decorative in a strawberry bed. It keeps berries off the soil, blocks splash-borne inoculum, conserves the moisture the olla supplies, and suppresses weeds[8]. Lay it once flowers appear, and keep it clear of the crowns themselves.

The autumn step is the one that catches people out with a perennial crop. It is tempting to leave a buried olla in a strawberry bed year-round because you do not want to disturb the plants — but water in a saturated terracotta wall expands when it freezes, and the vessel usually cracks. Lift it carefully from the edge, working around the crowns, and reinstall in the same hole in spring.
05 · PROBLEMS SOLVED
Strawberry problems caused by irregular or overhead watering

- Botrytis grey mould. The dominant strawberry fruit rot: a fuzzy grey growth that ruins berries on the plant and in the punnet. It needs free moisture and extended wetness on flowers and fruit to establish, so avoiding overhead irrigation is a first-line cultural control alongside mulching, open spacing, and prompt removal of infected fruit[5]. Ollas eliminate the irrigation contribution entirely.
- Anthracnose and leather rot. Both spread when rain or irrigation splashes soil-borne inoculum onto fruit. Sub-surface watering plus a straw mulch layer removes most of that pathway[6].
- Small, hard, seedy berries. The classic drought signature. Berries size by cell expansion over a short window, so a dry spell during fruit sizing permanently caps fruit size. Steady moisture through that window is the single biggest lever on berry size.
- Poor fruit set and low berry count. Water stress at bloom reduces the proportion of flowers that set. It also stresses the plant into prioritising survival over reproduction.
- A weak crop the following year. June-bearing varieties initiate next season’s flower buds in late summer and autumn. A plant that is neglected after harvest sets fewer buds, and the loss does not show up until the following June.
- Crown and root rot. The overwatering failure. Strawberries are genuinely intolerant of saturated soil, and a crown kept persistently wet rots outright. Plant with the crown at soil level, use raised beds or mounds in heavy ground, and keep plants out of the immediate wet ring around the olla.
- Runners that fail to root. Daughter plants need moisture at the point where they touch down. A bed that dries between waterings produces runners that wither before establishing.
06 · LAYOUT & RUNNERS
Bed and container layouts, and managing runners around the olla
Standard spacing depends on system. In a matted row, June-bearing plants go in at 18–24 inches apart in rows 3–4 feet apart and are allowed to fill in with runners[11][12]. In a hill or raised-bed system — the usual choice for day-neutral and everbearing types — plants sit 12–15 inches apart in staggered double or triple rows with runners removed[9][10].
Raised bed, hill system. The cleanest olla setup. In a 4×4 bed, install two 1–2 gallon ollas on a diagonal about 2–2.5 feet apart, and ring four to six plants around each at 8–12 inches. Matted row. Harder, but workable. Space ollas along the row at roughly 2.5–3 foot centres so their wetting fronts overlap into a continuous damp band, and mark each neck with a tall cane before the runners take over. Then deliberately train daughter plants outward from the ollas rather than over them, so you keep a clear refill corridor. A matted row that has grown across its own irrigation points is genuinely annoying to manage.
Containers. Strawberries are excellent container plants and containers are where the olla advantage is largest, because a shallow-rooted crop in a limited soil volume dries out fastest of all. Use a large container — at least 14–16 inches across and 10–12 inches deep — with a half-gallon to 1-gallon olla in the centre and three to five plants around the rim. Do not attempt this in a small pot: the vessel would displace most of the root volume. Expect to refill every one to two days at the height of summer.
Runner management. For everbearing and day-neutral varieties, pinch runners off through the season to keep energy in fruit production. For June-bearers in a matted row, allow a controlled number of daughters to root and remove the rest. Either way, the practical rule under olla irrigation is the same: do not let runners root directly on top of the neck or the wetting ring closest to the vessel, where crowns stay wettest.
Renovation. After the June-bearing harvest, mow or shear old foliage, narrow the rows, thin crowded plants, and top-dress. It is the ideal moment to check your ollas — lift them, clean the outer wall of any mineral scale, and reinstall before the bed closes over again.
07 · HARVEST SEASON
Harvest-season notes and overwintering the olla
Pick strawberries in the early morning when the fruit is cool and firm, and pick every day or two through the peak. Fruit left to over-ripen on the plant becomes a botrytis source that infects the berries around it, so removing anything soft, mouldy, or damaged is part of harvest rather than an afterthought.
Do not deliberately dry the plants down to concentrate sugars. That advice circulates because heavily overhead-irrigated commercial fruit can taste dilute, but the real mechanism there is water landing on the fruit itself. With sub-surface olla irrigation the berries are never wetted from outside, so you get the flavour benefit without imposing drought stress — and drought-stressed strawberries are simply small and hard, not concentrated.
As autumn cools, taper refills and then stop entirely a few weeks before hard frost. Lift the olla before the ground freezes: a saturated terracotta wall cracks when the water in its pores expands. Work in gently from the side of the bed to avoid tearing crowns, rinse the vessel, soak off mineral scale in dilute vinegar if your water is hard, dry it completely, and store it under cover. Reinstall in the same hole in early spring, refill, and let it run for a day before growth restarts.
One final rule that applies to all olla irrigation: keep the reservoir to plain water. Dissolved fertiliser salts clog the micropores of the clay and permanently slow discharge, and strawberries in particular are sensitive to salt build-up in the root zone.
