Why freezing water breaks terracotta

Water is unusual among common liquids in that its solid phase is less dense than its liquid phase. As it crystallises, the molecules arrange into an open hexagonal lattice and the volume increases by approximately nine per cent[15]. That expansion is what bursts outdoor taps, splits garden hoses, and cracks unglazed pottery left outside in a cold snap.

Inside an olla there are two separate reservoirs of freezable water. The bulk water in the chamber is the obvious one; a full pot sealed by its lid becomes a closed pressure vessel as soon as a crust of ice forms at the top. The less obvious one is the pore water in the wall itself. Fired terracotta typically has substantial open porosity — that is not a defect but the working principle, since the connected pore network is what lets moisture move outward under soil suction[1][15]. A wall saturated with pore water behaves like any porous building material in frost: ice forms in the larger pores, drives unfrozen water into finer ones, and generates internal pressure that fatigues the ceramic.

Damage therefore correlates with cycles, not just with minimum temperature. A single mild frost rarely hurts anything. Lift or leave? Matching winter care to your zone

There is no single correct answer for every garden, because “winter” means something very different in Tucson than in Minneapolis. What matters is whether your soil freezes to olla depth and how many times it crosses zero.

  • Frost-free or near frost-free climates. Ollas can stay in the ground year round. Drain them anyway at the end of the growing season if the bed is resting — standing water in an unused vessel goes stale and encourages biofilm — but no lifting is required. Many gardeners in these zones simply keep running them through a mild winter crop.
  • Light or occasional frost. Drain fully before the first hard frost and leave the ollas buried with the lid on. Add a thick mulch layer over the bed to buffer soil temperature. Risk is low provided no water sits in the chamber and the pot is not sitting in a waterlogged pocket.
  • Sustained freezing winters. Lift the ollas. Once soil freezes solid to root depth for weeks at a time, a saturated terracotta wall will cycle repeatedly and the safest place for the vessel is a dry shed or garage.   • Freeze-thaw-prone maritime winters. The trickiest case: temperatures hover around zero and cross it constantly. Lift if you can, and if you cannot, drain thoroughly, cap the neck so rain and snowmelt cannot refill the pot, and mulch heavily. 04 · THE OVERWINTERING METHOD

How to overwinter olla pots step by step

Time it to the forecast, not the calendar. Do this before the first hard frost, not after it. A light touch of frost on the surface is harmless; the first night that freezes the top few centimetres of soil is your deadline. In most temperate gardens that falls in mid to late autumn.

Drain completely. Siphon, bail or tip out every drop. A hand pump or a length of aquarium tubing makes short work of a buried vessel you do not want to lift. Do not leave “just an inch” in the bottom — that inch is enough to form ice and stress the base.

Lift carefully if you are storing. Loosen the soil in a ring around the shoulder with a hand fork before pulling. Do not lever against the neck; ollas usually break at the rim, and roots that have matted around the body will resist. Work the vessel free with a gentle rocking motion rather than a straight pull.

Clean and dry thoroughly. Brush off soil, rinse, scrub away algae or mineral crust, then leave the olla somewhere warm and airy for at least several days — a week is better. Terracotta holds water in its wall long after it looks dry to the eye, and storing a damp pot defeats the purpose. Store dry, off the ground, under cover. A shed, garage, basement or covered porch is fine; it does not need to be heated, only dry and rain-free. Set the pots on a shelf or timber batten rather than a cold concrete floor, which wicks moisture upwards. Do not stack them rim to rim without padding — a folded towel or sheet of cardboard between vessels prevents chipping.

If you leave them buried, cap and mulch. Fit the lid so autumn rain and snowmelt cannot refill the chamber, then mulch 8–10 cm over the bed. Mark each position with a stake so you can find them and so nobody drives a fork through one in spring.

Checking for frost damage before you refill

Before an olla goes back into the ground, give it two minutes of attention. Frost damage is often invisible at a glance and obvious once you know what to look for.

Run a fingertip over the whole outer surface. Flaking, crumbling patches or a powdery texture indicate spalling from freeze-thaw. Superficial flaking on an otherwise sound vessel is cosmetic and the olla will still work; extensive crumbling means the wall is being lost and the pot is nearing the end of its life.

Then do the ring test. Hold the olla loosely by the neck and tap the body with a knuckle or a spoon handle. An intact fired vessel gives a clear ring; a cracked one gives a dull thud. It is the same test used for checking flowerpots and tiles, and it catches hairline fractures the eye misses.

Finally, fill it with water above ground and leave it on a dry paving slab for an hour. Normal behaviour is a uniformly damp exterior — that is the wall doing its job. What you are looking for is a distinct drip or a wet streak running from one line, which indicates a crack rather than general seepage, and a visible drop in level that is much faster than usual. Common winter mistakes with olla pots

“It is buried, so it is safe.” Soil buffers temperature swings, but in cold regions frost reaches well below olla depth. Burial reduces the number of freeze-thaw cycles the vessel experiences; it does not eliminate them, and it does nothing at all about water left inside.

“I emptied it in October, so it is fine.” Not if the neck was left open. Autumn rain and snowmelt refill an uncapped olla within days. Draining without capping is the most common way people discover a split pot in April.

Sealing the outside to “waterproof” it. Never apply glaze, varnish, paint or sealant to the outer wall. It will not survive frost any better and it destroys the porosity the whole system depends on — a sealed olla simply stops irrigating[1].

Storing on a cold concrete floor. Concrete wicks moisture into the base of anything resting on it. Use a shelf, pallet or timber batten so air can circulate underneath.

Yanking a rooted olla out by the neck. By autumn, roots will have matted densely against the wet clay wall. Loosen the soil around the shoulder first. Forcing it risks snapping the rim — damage that has nothing to do with frost but gets blamed on it.

07 · BUYING FOR LONGEVITY

Choosing an olla that lasts through many winters

Longevity in an olla comes down to the firing and the form. A well-fired, even-walled vessel with no thin spots resists both handling knocks and internal stress far better than a soft, under-fired pot. Look for consistent colour, a clean ring when tapped, and a rim that is level and true so the cap seats properly — a cap that actually seals is what keeps winter rain out of a drained pot left in the ground.

Equally important, the outside must be unglazed. Some decorative “olla-style” pots are glazed for looks; those cannot irrigate, because the water movement depends entirely on the connected pore network in the bare clay[1][2].
